I was first introduced to the utter deliciousness that is GuinnessĀ Chocolate Cake a few years ago by my husband, who’d already been making it for years before that with the help of a recipe from a friend he met while studying abroad in Ireland. Of course, I was hookedĀ right from the very first bite, and now, I’m happy to say that GuinnessĀ Chocolate Cake has easily become one of my favorite go-to recipes for aĀ decadent dessert that’s just perfect for Saint Patrick’s Day, birthdays or justĀ about any other special occasion. Ā
Check out the recipe below, broken into separate sectionsĀ for both the cake and frosting, and get ready to enjoy some chocolaty goodness!
GuinnessĀ Chocolate Cake
Ingredients
- 1/2 lb Butter
- Ā 8 oz Guinness beer
- 2/3rd cup cocoa powder for cake; 1/4 cup to dust cake
- 1 tsp Salt
- 2 cups flour
- 2 cups sugar
- 1 1/4 tsp Baking soda
- 2 eggs
- 1/2 cup sour cream
- Vegetable oil to grease pans
Instructions
1. Heat oven to 350 degrees.
2. Lightly dust two 8-inch greased cake pans withĀ cocoa powder.Ā
3. In a heavy saucepan, heat butter, beer and cocoa powderĀ until butter melts. Allow to cool.Ā
4. Sift dry ingredients together and add beer-cocoaĀ mixture. Beat thoroughly for about 1 minute.Ā
5. Add eggs and sour cream. Beat for 2 minutes onĀ medium.Ā
6. Pour batter into prepared pans.
7. Bake at 350 degreesĀ for 25-30 minutes or until an inserted toothpick comes out clean.Ā
8. While cake is baking, make frosting using the recipeĀ below.Ā
9. Remove pans from oven. Place on a rack to cool for 10Ā minutes, then carefully remove cakes from pans.Ā Allow cakes to cool completely on racks.Ā
10. Use a long serrated knife to even tops of cakes. Use aĀ flexible spatula to spread a thin layer of frosting on top of each cake.Ā
11. Stack cakes and finish frosting. Cut, serve and enjoy!
Frosting
Ingredients
- 12 oz. Semi-sweet chocolateĀ chipsĀ
- 1 stick or 8 tablespoons butter
- 3/4 cup Heavy cream
- 2 oz. Guinness beer
- 3 cups powdered sugar
PreparationĀ
1. Place chocolate and butter in the bowl of a foodĀ processor.Ā
2. In a medium saucepan, combine heavy cream, beer andĀ powdered sugar. Stir until smooth and heat to a slow boil.
3. Turn on food processor and slowly add hot liquid to theĀ chocolate and butter. Blend until smooth. Allow frosting to cool before use.
