I was first introduced to the utter deliciousness that is Guinness Chocolate Cake a few years ago by my husband, who’d already been making it for years before that with the help of a recipe from a friend he met while studying abroad in Ireland. Of course, I was hooked right from the very first bite, and now, I’m happy to say that Guinness Chocolate Cake has easily become one of my favorite go-to recipes for a decadent dessert that’s just perfect for Saint Patrick’s Day, birthdays or just about any other special occasion.  
Check out the recipe below, broken into separate sections for both the cake and frosting, and get ready to enjoy some chocolaty goodness!
Smitten Kitchen Guinness chocolate cake

Guinness Chocolate Cake

Ingredients

  • 1/2 lb Butter
  •  8 oz Guinness beer
  • 2/3rd cup cocoa powder for cake; 1/4 cup to dust cake
  • 1 tsp Salt
  • 2 cups flour
  • 2 cups sugar
  • 1 1/4 tsp Baking soda
  • 2 eggs
  • 1/2 cup sour cream
  • Vegetable oil to grease pans

Instructions

1. Heat oven to 350 degrees.
2. Lightly dust two 8-inch greased cake pans with cocoa powder. 
3. In a heavy saucepan, heat butter, beer and cocoa powder until butter melts. Allow to cool. 
4. Sift dry ingredients together and add beer-cocoa mixture. Beat thoroughly for about 1 minute. 
5. Add eggs and sour cream. Beat for 2 minutes on medium. 
6. Pour batter into prepared pans.
7. Bake at 350 degrees for 25-30 minutes or until an inserted toothpick comes out clean. 
8. While cake is baking, make frosting using the recipe below. 
9. Remove pans from oven. Place on a rack to cool for 10 minutes, then carefully remove cakes from pans. Allow cakes to cool completely on racks. 
10. Use a long serrated knife to even tops of cakes. Use a flexible spatula to spread a thin layer of frosting on top of each cake. 
11. Stack cakes and finish frosting. Cut, serve and enjoy!

Frosting

Ingredients

  • 12 oz. Semi-sweet chocolate chips 
  • 1 stick or 8 tablespoons butter
  • 3/4 cup Heavy cream
  • 2 oz. Guinness beer
  • 3 cups powdered sugar

Preparation 

1. Place chocolate and butter in the bowl of a food processor. 
2. In a medium saucepan, combine heavy cream, beer and powdered sugar. Stir until smooth and heat to a slow boil.
3. Turn on food processor and slowly add hot liquid to the chocolate and butter. Blend until smooth. Allow frosting to cool before use.

    I love that the recipe comes right from Ireland, you know it’s a good one then since it’s Guiness!! YUM!! 🙂
