How do you make a staple dish stand out?
Pineapple cakes are flaky rectangular pasties filled with shredded pineapples and are a standard Taiwanese dessert (you’ll find loads of varieties at the airport!) But to tell you the truth, I never really loved them. They are flakey and can be a little bit too rich due to some bakeries using lard in place of butter…yes, your arteries should be afraid. But I discovered Sunny Hills Bakery in Taipei and I am reconsidering my feelings about pineapple cake. The Sunny Hills version is made with 100% organic pineapples from the BaGua mountains in Taiwan (as opposed to being filled with shredded winter melon as well to save on costs!). Japanese flour and New Zealand butter complement the local farm fresh eggs used in these cakes. I definitely found these dainty gourmet cakes to be delicate, but packed with pineapple flavor.
We stopped by a bakery location in Taipei and it is a must see store/restaurant as well.
It is an extremely simple concept because they only make one product – the pineapple cakes! But once you walk in and sit down, you are presented with a cup of complimentary tea and a single pineapple cake. The decor is modern and inviting and you can sip and munch on your free cake and tea before you go to the counter to order a box to take back home (complete with cute tote bag).
So if you’re in Taipei and want a break and sweet treat, stop by Sunny Hills !

A pineapple cake sounds like something I would enjoy, Though I won’t likely find myself in Taipei any time soon, perhaps I can find a good one around here.
