I have no time, like everyone else.  I have two little ones so I’m always looking for easy, but healthy and tasty recipes (it’s not easy to check all three!)  So I was really happy to discover and refine this recipe for the best gluten-free sugar-free banana muffins.  I’ve made these for many school snacks and birthday parties. They’re similar to my pumpkin muffins, but are even easier to make. Seriously I make these ALL THE TIME and they are guilt-free!  In addition, we always have bananas at home so these also become a tasty treat for my daughter. They are always moist, relatively easy to make, and come together easily in a blender.  The muffins also have the most wonderful fragrance from the bananas and generous portion of vanilla extract.

I’ve made these a few different ways – with a mix of fresh and dried blueberries or sometimes with chocolate chips for a little decadence. Add whatever suits your mood.  Unlike most baking recipes this is slightly flexible with the amount of oats and fillers. These muffins will remain gluten-free, mostly sugar-free, and delicious. Yasss to treats that are tasty and healthy too!

The best Gluten-free Sugar-free Banana Muffins

Ingredients

  • 2 medium bananas
  • 1/2 cup milk of your choice
  • 1/4 cup vegetable oil
  • 1/2 cup honey or maple syrup
  • 1 tablespoon vanilla
  • 2 eggs
  • 2 1/4 cups oats
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 cup blueberries, chocolate or butterscotch chips (chips are optional and then this won’t be sugar-free)
Servings

12 muffins

Preparation

1. Preheat your oven to 350°F and grease the cups of your muffin pan

2. Put all wet ingredients into the blender first and then put in the dry ingredients.

3. Blend well for about a minute. Mix in chips/berries of your choice.

4. Fill each cup in the muffin pan about 3/4 full and bake for 20 minutes.

5. Let muffins cool for 15 minutes before removing from pan. Enjoy!

    Oh yum, these look and sound delicious, and I like that they are so easy to make!
