Chia Seed Pudding Recipe

Confession: I ate chia seeds for the first time maybe 1.5 years ago. I had it in a drink and wasn’t sure quite what to make of it. It was slippery, but had the slight crunch inside. But I liked the mild flavor and long list of health benefits. Since then, I’ve tried to incorporate chia seeds into my diet more.  After all, it is high in antioxidants (more than blueberries!), fiber, protein, and omega-3 fatty acids. I created this chia seed pudding recipe for my little one (she can’t take too many chia seeds though and prefers them in a smoothie).

It’s such an easy and versatile treat.  Just remember to soak the seeds overnight and top with whatever fruits and nuts you may have in your home.

Hopefully the little one likes this again soon.  Otherwise, I still like the chia seed pudding for myself!

Chia Seed Pudding Recipe

Ingredients

  • 1.5 cups coconut milk (almond milk is also an option)
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla
  • 1/2 cup yogurt (optional)
  • 1/4 cup chia seeds
  • Fruit and other topping of your choice – I like strawberries, bananas, coconut, and almonds
Servings

2-4 servings, depending on if you are placing them into small cups or bowls

Preparation

1. Mix together first four ingredients, through the chia seeds.

2. Put in the chia seeds and make sure they are in about one layer and fully immersed.  They won’t soften if they don’t touch the liquid! Soak overnight and place into refrigerator.

3. Remove the chia seed pudding from the refrigerator and place into your serving cups or bowls. Top with fruit and enjoy!

    The first time I ate chia seeds was probably about 2 years ago as well. I don’t Like the taste of them in pudding bowls, but I do like them in smoothies where I can’t really taste them. beautiful photos here.

    I bought a big bag of chia seed a couple of years ago from Costco because I was trying to eat better….and today? Yep, the bag is collecting dust at the back of my cupboard. LOL! Thank you for the recipe, hopefully I’ll finally get to use mine.
